Pumpkin Power

 Pumpkins provided a lot of opportunities for learning, discovery and cooking for our TTh class.  We looked at the inside of the pumpkin, looked at pumpkin seeds and made pumpkin muffins. Overall, these were a hit!  Check out the recipe at  It is basically yellow cake mix (you can also use butter cake mix), a can of pumpkin and spices. No eggs.  It is a really thick batter so I would suggest using an ice cream scoop to load  the muffins. Also, depending on your oven, bake for 30-35 minutes (I baked a triple batch for 35 minutes and they were perfect) Read the reviews at for additional hints.
